Jumping into fall recipes with this fun twist on classic roasted almonds!

With fall recipes all around us, I wanted to hop on the bandwagon but with a twist. I am not the biggest fan of plain nuts like almonds or cashews. However, a friend introduced me to a variation of seasoned, roasted almonds and I immediately knew this needed to be on my list of fall recipes. That is how Miso Tamari Roasted Almonds came to be. If you were never a big mixed nut fan yourself, give this recipe a try and you may just fall in love.
Miso Tamari Roasted Almonds
-2 cups raw almonds
-2 Tbsp Tamari
-.5 tsp sesame oil
-1 TBSP white miso paste
-3 Tbsp Brown Sugar
1. Preheat the oven to 300 degrees F. Place the raw almonds on a lined baking tray and spread evenly. Toast in the oven for 10 minutes. Stir and place back in the oven for another 10 minutes or until golden brown, not burnt.
2.Take them out of the oven and set aside. In the meantime mix together the tamari, sesame oil, miso paste and brown sugar, stir until well combined. Pour the almonds into the tamari miso mixture and stir until the almonds are fully coated. Pour back onto the baking tray and place back in the oven, reduce heat to 200 degrees F and cook for an additional 10 minutes.
3.Remove from the oven and let them cool to room temperature before enjoying.
Some tips:
Use parchment paper or a silicone baking mat while baking. This will make sure your almonds do not stick to the pan as the sugar caramelizes in the oven.
Do not burn the almonds! Keep an eye on them if you have to but I can tell you that these will not taste great if they burn. Since there is sugar and oil on them they can burn quickly so save your chores for after they are done baking.
Feel free to adjust this recipe to your taste buds. Some people will want them sweeter or more tamari etc. Roasted nuts are versatile and you really can add anything your heart desires to this recipe, have some fun!
These nuts make for a great gift or snack for hosting. Pour them into a cute jar with a label and the date they were packaged and toss them in your holiday gift baskets for a homemade touch!
