Asparagus Phyllo Flatbread

If you’re looking for a veggie-forward meal that feels fancy but takes minimal time and ingredients, this Asparagus Phyllo Flatbread is your new go-to. It’s crisp, golden, and loaded with seasonal asparagus—perfect for brunch, lunch, or a savory snack board centerpiece.
The phyllo base keeps things light and flaky (and lower in refined carbs than your average flatbread), while asparagus delivers gut-friendly fiber and antioxidants. Add microgreens, a touch of citrus, and maybe a crumble of cheese if you want to take it over the top.

Ingredients (Serves 4)
1 sheet phyllo pastry, thawed
1/2 cup of grated parmesan cheese
2 tbsp olive oil or melted butter (for brushing)

Salt and pepper to taste

1 tbsp of hot honey
1/2 cup crumbled feta or goat cheese
Zest of 1 lemon or a few lime wedges
1/2 cup microgreens or sprouts
Fresh thyme, chives, or basil
Instructions:
1. Preheat Oven
Set your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Build the Phyllo Base
Lay 1 sheet of phyllo on your prepared pan. Brush lightly with melted butter.
Repeat, layering each sheet with butter until all 5–6 sheets are stacked.
3. Add Cheese Layer
Sprinkle the top layer evenly with ½ cup grated Parmesan—this will melt into the base and create a rich, cheesy foundation beneath the asparagus.
4. Top with Asparagus
Toss trimmed asparagus with a drizzle of oil, salt, and pepper. Lay spears side-by-side across the Parmesan-coated pastry.
5. Bake
Bake for 20–25 minutes, or until the phyllo is golden and crispy and asparagus is tender.
6. Finish & Serve
Top with microgreens, a squeeze of lime, and an optional drizzle of hot honey if you want to bring out the sweet-savory contrast.
