Puff Pastry Apple Pumpkins: A Speedy Thanksgiving Treat
Quick puff pastry apple pies in the shape of little pumpkins- these were so delicious and super fast to make! Perfectly suited for thanksgiving dinner next weekend, they make an effortless yet charming dessert.
Inspired by similar recipes online, my version combines simplicity with seasonal flavour. Here’s what you’ll need:
- 1-2 sliced apples (I prefer tart apples and used a mix of red and green)
- 2 packages of puff pastry (you get about 6 fully wrapped apple slices per roll)
- Cinnamon and granulated white sugar topping (or pumpkin pie spice and sugar)
- Egg yolk wash for the top.
To begin, assemble your little pumpkins as shown. I used the top of a water bottle to cut out the centres. Next, carefully wrapped the apples (the faster you work the better, the puff pastry starts to get harder to work with). Then, paint an egg wash and sprinkled with the sugar spice. Place into preheated oven at 400 for about 20 minutes or until golden and cooked through.
