Watermelon Pizza with Radish, Red Onion & Lime

A fresh and fun summer snack that’s hydrating, gut-friendly, and totally blood-sugar conscious.

When summer hits, all I want are simple, cooling snacks that feel like a treat—but still pack some nutrition. Enter: Watermelon Pizza.

It’s crunchy, juicy, refreshing, and topped with vibrant veggies and herbs for a savory twist. This is not your kid’s watermelon sprinkled with chocolate chips (though we love that too). This version is balanced, beautiful, and makes the perfect snack board for patio lunches, playdates, or solo mom breaks in the sunshine.

Why You’ll Love This Watermelon Pizza
  • Hydrating and rich in antioxidants
  • Packed with fiber and crunch from radish and red onion
  • Naturally sweet with no added sugars
  • Easy to prep in under 10 minutes
  • Diabetic-friendly and totally satisfying

Ingredients (Serves 4 as an appetizer):
  • 1 large round slice of watermelon, about 1 inch thick (cut from the center for a pizza shape)
  • 3–4 thin radishes, sliced
  • 1/4 small red onion, very thinly sliced
  • 4–5 cherry tomatoes, halved (optional for color + lycopene)
  • Juice of 1/2 a lime
  • Small handful of fresh basil or microgreens
  • Flaky sea salt or feta crumbles (optional)
  • 1/2 tsp olive oil or balsamic glaze (optional drizzle)

Instructions:
  1. Slice watermelon into a large round “pizza” slice about 1 inch thick. Cut into 6–8 wedges.
  2. Prep toppings: Thinly slice radishes and red onion. Halve cherry tomatoes.
  3. Assemble:
    • Arrange radish, onion, and tomato slices on each wedge.
    • Sprinkle with torn basil leaves or microgreens.
    • Add a light sprinkle of sea salt or crumbled feta if desired.

  4. Dress it up:
    • Drizzle each wedge with fresh lime juice.
    • Optional: finish with a touch of olive oil or balsamic glaze.

Tips:

  • Go spicy: Add a few chili flakes or a thin slice of jalapeño for kick.
  • Serve as a fun appetizer at summer BBQs
  • Build a savory fruit board with other melons, olives, and nuts
  • Turn it into a kid-friendly DIY station with toppings like cucumbers, mint, or even a swipe of yogurt as “sauce”
