Spinach, mixed bag of greens @eatsmartveggies (kale, Brussel sprouts , cabbage, radicchio) , more radicchio added, top with baked croutons, pecans and lemon dressing.

To make dressing: combine 1/2 cup of olive oil, juice and zest of 1 lemon, 2 tbsp of apple cider vinegar, 1 tbsp of grainy mustard, 1 tbsp of maple syrup, salt and pepper to taste.
