When summer hits, all I want are simple, cooling snacks that feel like a treat—but at the same time still pack some nutrition. Enter: Watermelon Pizza.
It’s crunchy, juicy, refreshing, and topped with vibrant veggies and herbs for a savory twist. Unlike the classic sweet version, this is not your kid’s watermelon sprinkled with chocolate chips (though we love that too). Instead, this version is balanced, beautiful, and makes the perfect snack board for patio lunches, playdates, or solo mom breaks in the sunshine.

- 1 large round slice of watermelon, about 1 inch thick (cut from the center for a pizza shape)
- 3–4 thin radishes, sliced
- 1/4 small red onion, very thinly sliced
- 4–5 cherry tomatoes, halved (optional for color + lycopene)
- Juice of 1/2 a lime
- Small handful of fresh basil or microgreens
- Flaky sea salt or feta crumbles (optional)
- 1/2 tsp olive oil or balsamic glaze (optional drizzle)
Instructions:
- Slice watermelon into a large round “pizza” slice about 1 inch thick. Then, cut into 6–8 wedges.
- Prep toppings: Thinly slice radishes and red onion. Halve cherry tomatoes.
- Assemble:
- Arrange radish, onion, and tomato slices on each wedge.
- Next, sprinkle with torn basil leaves or microgreens.
- Add a light sprinkle of sea salt or crumbled feta if desired.
