Mason Jar Southwest Salad: A Busy Mom’s Lunch Hack

Colorful, satisfying, and totally meal-prep friendly—with a zesty dressing that ties it all together.
Between work, family, and keeping up with life’s chaos, lunch is often the first meal to be forgotten—especially for us moms. But what if I told you there’s a way to prep a balanced, flavorful lunch in just a few minutes, that actually holds up beautifully in the fridge for days?
Introducing: the Southwest Mason Jar Salad 💛
Loaded with corn, black beans, tomatoes, leafy greens, and green onion, it’s high in fiber, full of crunch, and finished with a zesty dressing that brings everything together.
Ingredients (Makes 2 Large Mason Jar Salads)
Salad Layers:
- 1/2 cup salsa or diced cherry tomatoes
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels (fresh, frozen or canned)
- 2 tbsp chopped green onion
- 1–2 tbsp fresh cilantro, chopped (optional)
- 1/4 cup shredded cheese (optional for protein + flavor)
- 2–3 cups leafy greens (spinach, romaine, or spring mix)
Creamy Southwest Dressing:
- 3 tbsp Greek yogurt or mayo
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- Salt + pepper to taste
- Optional: 1 tsp hot sauce for a kick
Instructions:
1. Start with the Dressing
Add all dressing ingredients to the bottom of each jar (about 2–3 tablespoons per jar). This keeps the salad crisp until you’re ready to shake and serve.
2. Layer Smartly
In this order:
- Salsa or tomatoes
- Black beans
- Corn
- Green onions + cilantro
- Shredded cheese (if using)
- Leafy greens on top
The trick is to keep wet ingredients at the bottom and greens at the top so they stay fresh and crisp.
3. Seal + Store
Seal jars tightly with a lid and store in the fridge for up to 4 days. When ready to eat, just shake the jar (or dump into a bowl) and enjoy!
